Mango Chia seed pudding

  • Another healthy and easy to make breakfast/ dessert pudding – Mango Chia seed pudding.

  • 2 ripe mangoes cut into pieces.
  • 1 c. skim milk (or use almond milk)
  • 2-3 dates or use dates paste
  • 1/4 c. chia seeds
  • crushed nuts and Mango pieces to garnish
  • water as required
  • 1. Start blending the mango with little water until you have a thik puree. Add more water if required.
  • 2. Pour the mango puree evenly into 2 glasses or bowls. Set in the fridge covered properly.
  • 3. Blend the milk and the dates until smooth. Pour the milk into a small bowl.
  • 4. Add chia seeds and mix well until it becomes a thick pudding. (The best way to eat chia seeds is to soak them in mik or water.)
  • 5.Stir constantly for 3-4 minutes then let stand for about 5-10 minutes to thicken.
  • Pour the chia mixture on top of the mango puree.
  • 6. Allow to set for at least 4 hours in the fridge or overnight.Make sure that you cover it properly.
 
  • Serve with chopped nuts and mango slices.
