Mangalore Buns

  • Buns or Manglore buns is the most favorite snacks in my family .
  • We even enjoy this for breakfast ( making the job easier for me as we don’t need any side dish for buns   ) .
  • Some serve this with coconut chutney .
  • But we love very sweet ones hence for us we don’t need any chutney.just munch as it is 
  • Buns can be prepared very easily , just kneading few ingredients to a soft dough .
  • keep the dough for fermentation for some hours and then enjoy them .
  • The only drawback of buns is that the main ingredient is maida(All purpose flour ).
  • I have tried replacing maida with wheat flour. Even though they came out really well , we still felt the ones with maida itself is more tasty .
  • once in a while maida bhi chalega !!!! so here is my recipe for buns .
  • Maida 1/2 kg (almost )
  • curd - 1/2 cup
  • ripe small banana - 3 to 4
  • baking soda - 1/2 teasp
  • salt - as reqd
  • sugar - 4 to 6 tbsp (or according to your taste )
  • jeera - 1 tsp
  • refined oil for deep frying
  • Mash the banana nicely to a paste with your hands .
  • Add curd , salt , sugar and jeera .
  • Mix well till the sugar dissolves completely . now add baking soda .
  • After a few seconds go on adding the maida .. knead well till you get a soft dough .... ( the amount of maida depends on the curd mix , so add till you get the exact consistency .non sticky , yet super soft )
  • Now heat 1 teasp of oil and pour it around the kneaded batter ..
  • no need to knead or mix the oil in it ..
  • cover and keep for some 6 to 8 hours of fermentation..
  • later.. pinch balls out of it (almost that you take for making chappathi) . then roll it to a thick puries ..
  • you can dust the balls in the maida while rolling. Now deep fry in the oil.
  • you can see them puff in the hot oil .
  • fry till they become golden brown .....
  • if you want them to be sweeter , increase the sugar
